Isn’t he the cutest thing you have ever seen? I am not biased at all…

When I was in college (lo so many years ago), I used to run 5-8 miles almost every day. I was known at JBU for running. Now? I do good to get outside and walk my puppy a couple days a week.
So… I am getting back into it. I am starting tomorrow, with a goal of running 30 minutes by the end of 6 weeks, with a second goal to run in a 5K in the fall.
WEEK 1 -
30 minutes total:
• walk 10 minutes
• walk/run 10 minutes (run 1 minute or less then walk -get up to 2 min running segments by end of week)
• walk 10 minutes

This is a great, healthy spaghetti sauce recipe. I usually double it and freeze the rest for a quick dinner.
1 cup chopped onion
1/2 cup of green pepper
1/4 cup chopped celery
2 cloves garlic, minced
1 tablespoon cooking oil
4 cups of chopped, peeled tomatoes (can substitute two 14 1/2-ounce cans of tomatoes, undrained and chopped – it is faster, but not quite as tasty!)
1 6oz can tomato paste
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
optional
2 tablespoons snipped fresh parsley(can substitute dry)
1 tablespoon snipped fresh basil (can substitute dry)
2 teaspoons snipped fresh marjoram
Cook onion, pepper, celery, and garlic in oil until tender.
Stir in 1/3 cup water, tomatoes, tomato paste, parsley and herbs (if using), sugar, salt, and black pepper. Bring to a boil; reduce heat. Simmer covered for 30 minutes. Uncover, simmer for 10 to 15 minutes or to desired consistency, stirring occasionally. Stir in fresh herbs if using.
Serve over hot cooked pasta. Sprinkle with parmesan cheese.
